Galangal - Thai

Kha Thai (ข่าไทย).

Thai galangal has pale, white to pinkish flesh with a sharp, clean aroma and a bright citrus-peppery bite.

Commonly used in Thai soups such as Tom Yum and Tom Kha, as well as in curry pastes, where its fragrance remains distinct even after long cooking.
