Spicy and sour pork ribs soup (tom saab)

Ingredients

500g pork ribs, cut into pieces
2 tbsp. Fish Sauce
1 tsp. Sugar
2 Lime juice
1 tbsp. Chili flakes
15 Birds Chili
5 Fried Chili
5 pcs Sliced Galangal
2 Lemongrass Stalks (cut oblique)
5 Kaffir Lime leaves
2 Culantro (cut into
2 inches long)
3 whole shallots
10g mushrooms (optional)

1. Pour 2 liters of water into a pot and boil. Then put the pork ribs. Stew with low heat for 1 hour or just before it gets tender.
2. When pork ribs start to tender, add galangal, lemongrass, kaffir lime leaves, shallots, and bird chili. and mushrooms (optional). Cover and continue cooking for 15 minutes.
3.Season with fish sauce, sugar, and then turn off the heat. Gradually add lime juice, fried chili, culantro, chili flakes, and coriander.
4. Garnish with more culantro and coriander.
